Sandy, decomposed-marine-sediment soils give Pinot Noir an expressiveness at sparkling ripeness we haven't found anywhere else.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eWinemaking:\u003c\/strong\u003e Whole-cluster pressed, clean juice barrel-fermented with native yeast for three weeks. 12 months unsulfured on sediment in barrel. Bottled with fresh yeast and a small amount of sugar; 22 months in bottle before disgorgement. Zero dosage.
