V3 CARBO-NATION
The third batch in our CARBO-NATION lineage — non-disgorged traditional-style sparkling wine, cork-finished, sediment left in the bottle. Following the V2 release, V3 continues our experiment: how far can a modern sparkling travel when the lees stay in place?
As with prior releases, the base wines were barrel-aged for depth and texture before bottling. Fresh yeast and sugar added prior to tirage, but in smaller quantities than a typical traditional-method — light sediment settles so the wine can be enjoyed straight from bottle without disgorgement. The wine ferments dry; no residual sugar.
CARBO-NATION also has a cork — because sometimes it's fun to have a cork.
