Clownfish — Chenin blanc
A still Chenin blanc with an unexpected story. Originally bottled in 2023 as pét nat — but the wine never started secondary fermentation in bottle. Rather than disgorge a flat wine, we let it rest undisturbed for two years on its lees, then decanted to neutral barrel for a final integration. What came out is an unhurried, textured expression of Chenin: bright acidity, gentle salinity, and the weight of patience.

Style: Still white — the sibling to Beta (still red). Two wines from a sparkling winemaker's mindset, made still on purpose.
Winemaking: Whole-cluster pressed and fermented with native yeast. Bottled in 2023 with the intention of secondary fermentation; when that didn't happen, the wine aged two years in bottle on its lees. Decanted to neutral barrel for a final rest, then bottled still. No disgorgement; no residual sugar.
